Oatmeal-Pear Pancakes

Vegetarian!

Ingredients
1 Pear (cored)
1 Egg
1 tablespoon Honey
1 tablespoon Yogurt
1/2 cup Oats
1 teaspoon Cinnamon
1/2 teaspoon Baking soda
Coconut oil for cooking
TOPPINGS SUCH AS:
Maple syrup
Honey
Chopped nuts
Sliced fruit

Step by Step Instructions
  1. Put the pear, egg, honey, yogurt, oats, cinnamon, and baking soda into a blender and blend into a batter (or use a bowl and hand-blender)
  2. Grease and heat a non-stick skillet over low-medium heat
  3. Add the batter to the pan in small dollops. Cook on 2 or 3 minutes, then flip over and cook the other side. Repeat until all of the batter has been used.
  4. Serve the pancakes warm and topped as desired.
