Welcome back to another week of local products. We want to welcome Franklin Juice Company to the Market. Brent joins us this week offering several varieties for fresh juice.
Other items of interest this week:
The recent cold snap has really affected the produce available. With the sun and warmer temperatures we are getting this weekend, this should help all the produce get back to growing. Watch for more varieties soon.
Flying S Farms is introducing a new bread this week. It is a 7 Grain Sour Dough Bread and rolls that has a smooth soft texture, great for sandwiches or toasting.
Many people like chicken tenders. Now Wedge Oak Farm brings them to the Market. For those interested in the Super Bowl, which is still a couple weeks away, both Wedge Oak Farm and West Wind Farms have chicken wings that are perfect for any parties you might be attending.

Good afternoon!
I’m Castiel, the new market and CSA coordinator at R2R. I’ve enjoyed getting to meet some of you at the market! One thing that has really helped us recently is feedback from our customers. For example, please request items if you don’t see them on the site! Often they’re growing on the farm, we just don’t know they are in demand so we don’t add them to the market site. So, please keep the feedback coming and as always thanks for supporting your local farmers and craft makers. The VI Locally Grown market is now open for orders!
Don’t miss out on Ridge to Reef farm’s mouthwatering mango fed local organic pork cuts, available for purchase at the market. We also recently added Surinam Cherries!
The new location for the market is a beautiful experience within itself. If you haven’t had a chance to see the Lawaetz Museum property at Little La Grange on Mahogany road, the market is a great opportunity to support your local farmers and enjoy the a local heritage site for St. Croix.

CLG: Opening Bell: Let's Grill: Chops, Ribs, BBQ Sauce...

Why not take advantage of the mild weather and do some grilling? You can find all the best items at Conway Locally Grown: Chops, brats, steaks, ribs, jalapenos, burgers. And when they’re almost done, brush with some BBQ sauce for awesomeness. I just wish we had some zucchini and corn for the grill as well!
This will be the last market for January due to a scheduling conflict on Jan 30th, so order enough goodies to get you through 2 weeks.

Welcome to another week of shopping at Manchester Locally Grown online farmers’ market. The market will be open for ordering until Tuesday at 10 pm, and pickup will be on Thursday from 3:00 till 4:30.

Everyone needs some new houseplants in the dead of winter. We have added some lovely succulent planters, some round and some oval. These will really brighten up your winter, or that of a friend. Check them out – we have four different ones to choose from.
This year-round online farmers’ market offers several types of winter vegetables, as well as other foods and herbal products produced on local farms. Support your friends and neighbors who have grown and produced these items.
A sampling of items available from our local farmers: (L to R) Spare ribs from Weaver Fars, Open range eggs from Wayne Diller, Round succulent planter from Dogwood Valley Greenhouse, Baby mocassins and “Chocolate Swirl” Bar Soap from Solace Farm.
Ordering will be open until Tuesday at 10 p.m., and your order will be available for pickup on Thursday between 3:00 and 4:30 at Square Books, 113 E Main, Manchester. We can also hold your order in the refrigerator till Friday, if that’s more convenient for you. Just call (931) 273-9708 if you prefer to utilize this free service.

Recipes
SLOW-ROASTED, BACON-WRAPPED RABBIT (serves 4-6)
INGREDIENTS:
One rabbit from Three Oaks Rabbitry
Five slices of bacon
Vegetables in large chunks (this is usually whatever I choose to have as a side dish – sweet potatoes, or apples and onions, carrots, turnips etc.)
A splash of olive oil (if needed)
Salt and pepper
A splash of cider or white wine (optional)
DIRECTIONS:
Rinse the rabbit and pat dry. Sprinkle the rabbit with salt and pepper. Place a splash of olive oil in a roasting pan with a lid and add the rabbit on top. Once in the roasting pan, drape the rabbit with the bacon. With the pan open, roast the rabbit for 15 minutes at 400 degrees.
After 15 minutes, add the vegetables and a splash of wine or cider (plus any olive oil for the vegetables) place the lid on the roasting pan, and turn the oven temperature to 200 degrees. Cook until the rabbit is done (160 degrees on a meat thermometer) and the vegetables are tender – this usually takes 2 or 3 hours.
I generally place the rabbit in the oven after lunch and take it out for dinner. If this is your first time slow roasting meat, just check on it once in a while to make sure that the meat is staying moist – most likely you’ll have an abundance of good juices from the meat, bacon, and vegetables. To serve the rabbit, I generally cut it into 6 pieces, the two back legs, I split the back down the middle, and also serve the two ribs and front legs together. Alternately, rabbit is fairly easy to pull from the bones when cooked this way.

JUST IN FROM DOGWOOD VALLEY GREENHOUSE
Dogwood Valley Greenhouse has added several nice houseplants to the listings. Available now are needlepoint ivy, cape primrose, wandering jews, and two colors of spider plants, all in 10" hanging baskets. We also have several very nice succulent planters and herb collection baskets for your table or windowsill. Panda plants and aloe vera plants would also be good additions to your winter indoor garden. All these need to stay inside until our frost-free date near the end of April, then will be happy to spend the summer on porch or patio.
We are also making decisions about spring offerings of flowering hanging baskets, vegetable plants in gallon pots, and 6 packs of bedding plants. Jess Wilson of In Town Organics and Summer Fields sends the following message: I want to point out something very exciting that happened in 2014 – that was the opening of Three Oaks Rabbitry on Gudger Rd. in Sewanee. I have raised rabbits for our family and a few lucky others for the past ten years. These rabbits live in large cages that are moved daily to allow access to fresh grass and plenty of hopping room and sunshine when desired. My rabbits are fed oats and locally grown alfalfa hay. I could not sell these rabbits legally in the past because there was not a processing facility in the area. Erich Eichler was willing to do the work (and waiting) needed to change this. Last year his processing facility was inspected by the USDA and FDA for processing rabbits for legal sale in our area! I’m so excited to finally have a legal outlet for selling my rabbits. Three Oaks Rabbitry sells my rabbits as well as rabbits that Erich raises himself and you can purchase them on the market! Domestic rabbit is an incredibly lean, white meat that can be substituted for chicken in many recipes. " This winter has been different, at first I was mad and upset with crops being ruined when some were reaching their prime. To see turnips shatter like glass from being frozen is ugly. But then I changed my mind. Without winter, pests in the garden would continue, there would never be an end to their cycle. So now I am happy to say that winter is not all bad. It’s the reset button for growing things. I’ve included some quotes I found online. The most important is the Bible verse from Deuteronomy 11:13-15. It says “It shall come about, if you love the Lord your God that He will give the rain for your land in its season that you may gather in your grain and your new wine and your oil. He will give grass in your fields for your cattle, and you will eat and be satisfied.”
Our ancestors didn’t have greenhouses back in the 17 & 1800s, they grew what they could during the spring and summer and stored for winter. To them winter was horrible. We have so many luxuries in life to be thankful for. Giving our lands a rest period or at least a slower pace, isn’t all bad."

Farm to Table Recipes
Chili
1 to 2 tablespoons oil
1 pound sirloin, cubed, grass fed, grass finished
1 pound ground meat, grass fed, grass finished
1 large onion, finely chopped
1 Bottle of beer
1 14.5 ounce can diced tomatoes
1 cup coffee (strong is best)
1 tablespoon tomato paste
1 tablespoon chili sauce
1 tablespoon cocoa powder
1/2 finely chopped chili of choice
1/4 cup brown sugar
1 tablespoon heaping of cumin
1 teaspoon heaping of coriander
1 teaspoon cayenne pepper
1 teaspoon salt
2 15 ounce cans kidney beans
1 15 ounce cans white beans
5 large carrots, chopped into discs (OPTIONAL)
In large stock pot or dutch oven, heat oil over med. flame and brown meat, sirloin chunks first then ground. When meat is lightly browned, throw on the onions. Take two large sips from the beer. Add remaining beer plus, tomatoes, coffee and tomato paste. Add sugar, spices and kidney beans. Reduce flame to low and let simmer for an hour. Add white beans and carrots simmer for another hour or two; longer will be better. Season as needed.
